Chicken Corn Chowder Revisited

Back in 2007, I found a recipe for Chicken Corn Chowder, that I thought was pretty good.  However, it was a somewhat complicated recipe, and I have never made it again.

Tonight when I came home from work, I realized I had not set anything out of the fridge for dinner, so I needed something I could throw together quickly, with things I already had on hand. One of the things I had on had was 3 ears of corn, that needed to be used today.  After poking around in the cupboard, I found enough things to make a pot of Chicken Corn Chowder that is just as good as if not better than the previous one and was way easier to make.  And that canned chicken made it a snap to prepare.
This version of corn chowder has these ingredients:

3 ears of corn, scraped from the cob
3 medium potatoes
1 large red pepper, chopped
1 jalapeno pepper, chopped
3-4 cloves garlic, minced
1 small onion, diced
1 12.5 oz can of chicken, with juice
2 cups 2% milk (or rice milk
2-3 tablespoons corn starch
salt and pepper to taste
3 tablespoons olive oil

Peel, dice and cook the potatoes in a small boiler until soft, drain.  IN a dutch oven, heat the olive oil, then saute the peppers, onion, and garlic until soft. Drain the chicken, but save the juice. Add the chicken to the dutch oven, and continue to saute for a few more minutes. Add milk, chicken juice, salt and pepper,potatoes,  and corn to the pot. Cook on medium low heat until thickened. Add 2-3 tablespoons of corn starch if needed to thicken the soup.   Serve with buttered toast or cheese toast. Mmmmm, goood!

Creamed Corn with Red Peppers

We drove down to Kanab again Monday afternoon. FabGrandpa needed some soup and some fruit bars, and I needed some veggies for this week, so off we went. It had been raining, storming, thundering and lightening for a couple of days, but on Monday the weather was clearing up, and the sky was beautiful. So was the desert:


We had lunch at Escobar's, a little Mexican place off the main drag, then headed over to the Foodtown. I found a Boston Butt pork roast on sale for $1.79 per pound, some fresh sweet corn, a red bell pepper, and some yellow squash. We brought our treasures home, where I got out the butcher knife and sliced off a few pieces of the roast. I breaded them with rice flour and fried them like pork chops. Boy were they ever good!

The next day, I poked holes in the rest of the roast and stuffed them with garlic, and put it in the crock pot while I was at work. I think it was the most excellent roast, ever! So, tonight, we had leftover roast with fried squash and creamed corn with red peppers.

The first time I made creamed corn with red peppers was when the refrigerator quit working last month. I had the last bits of those sweet Italian red peppers that I bought in Maryland last fall, and some corn, that I did not want to lose. I cooked them up together and it turned out to be very good.

Here is the recipe:

3 ears fresh sweet corn
1 red bell pepper
1/2 stick butter or margarine
salt and pepper to taste
1/3 cup milk

Shuck the corn and scrape the kernels off the cob. Wash and chop the red bell pepper. Melt the butter in a medium saucepan, then add the peppers and saute for a few minutes. Add the corn, milk, salt and pepper. Turn the heat down to low. Cook, stirring often, until the corn is done.

I took a picture of it, but it did not turn out very good, and made it look very unappetizing, so you won't see it here. Sorry. But, you will not be disappointed if you try this. Yum! Oh, and the best part: It's gluten free!

Chicken Corn Chowder

I found a really good deal on chicken the other day—only 89 cents a pound for leg and thigh quarters. The only catch was that you had to buy 10 pounds of it to get that price. Those of you who know me know that I live in a tiny little travel trailer and have a tiny little freezer. That 10 pounds of chicken just about filled up the freezer. So I have been cooking chicken just about every day for the last week. In order to not have the same old thing day in and day out, I have been trying new things. The chicken of the day for today may be the most yummy thing made with chicken, EVER! If you have a gluten freedie that you feed, or even if you don’t this should be on your menu soon. It tastes like love in a bowl.

Chicken and Corn Chowder

2 cups cooked chicken, diced
6 cups chicken broth
2 tablespoons butter
1 onion, diced
1 celery rib, diced
3 shallots, diced
salt and pepper to taste
2 medium potatoes, peeled and diced
1 ½ cups frozen creamed corn or 3 ears fresh, scraped off the cob
2 oz evaporated milk
¼ cup sour cream
1-3 tablespoons potato flour (or regular wheat flour if you are not gluten free)

Put the chicken, broth, corn and potatoes in a dutch oven and bring to a boil. Turn the heat down and simmer for 30 minutes or until the potatoes are soft. In the meantime, melt the butter in a skillet. Add the onion, celery, and shallots and saute until the onions are translucent. Add the onion mixture to the dutch oven. When potatoes are done, add the evaporated milk and sour cream. Add flour and stir until desired thickness is achieved.

This is very good served with buttered gluten free bread or cheese toast.

For an interesting variation, add a couple of roasted, diced poblano peppers with the onions. Yuummmm!
